Noma, a three-Michelin-starred restaurant in Copenhagen, Denmark announced its closing
in the year 2024.

After closing the restaurant’s services next year, the restaurant
will become a full-time food laboratory. The
Copenhagen institution will then spend its time developing new dishes
and products for the company’s e-commerce outfit, Noma Projects.

Chef René
Redzepi who runs the Copenhagen institution and has been named
his era’s most influential chef said that Noma has hit a breaking point and
now, “It’s unsustainable.”

Chef Redzepi will not just work
as a chef, but his role will be like a chief creative officer after the
restaurant’s closing. Noma, who has been named the world’s best restaurant five
times will open its dining rooms only for periodic pop-ups after the restaurant’s
closure.

Noma’s announced its closure through its official Instagram account and posted, “To continue being noma, we must change,” it also added, “We are beginning a new chapter.”

The shutting down of Noma is no
less than a shocker to everyone but the decision has been taken as Noma along
with many other restaurants is facing a sustainability crisis. Due to its labor-intensive,
innovative, and expensive style of dining, the workers are being severely underpaid.

Redzepi while talking about Noma’s
closing said, “We have to completely rethink
the industry.” He further said, “This is simply too hard, and we have to
work in a different way.”

This year, Noma is not the only
restaurant that announced its shutdown. Manresa, a three-Michelin-starred
restaurant in Los Gatos, Calif also closed its services. The restaurant’s
chef David Kinch said, “Fine dining is at a crossroads, and there have to be
huge changes.” Chef Kinch also said, “The whole industry realizes that, but
they do not know how it’s going to come out.”

Restaurant Noma was opened in the
year 2003 and will account winter 2024 as its last season.
