How to make Kombucha at home?

To make Kombucha at home you need some basic ingredients like yeast, sugar, and black tea. Prepare a mixture and set it aside for a few weeks. The process is known as fermentation, during that time bacteria and acids form in the drink, as well as a small amount of alcohol. The bacteria and acids form a layer on the top of the liquid called a SCOBY (symbiotic colony of bacteria and yeast). SCOBY can be used to ferment more kombucha.

Take a large jug, add 1.4 cups of cane sugar, and 3 cups of hot water.

Let the sugar dissolve completely, then add 2 tea bags. You can use either green or black tea. Allow it to sit for 10 minutes.

Take the tea bags out and add half a cup of vinegar or already prepared Kombucha.

Then add the active SCOBY. Cover with a layer or filter and keep it for 15-20 days. Store it in a cool and dry place.

The longer you store the Kombucha the less sweet it will taste.

At Last, extract the SCOBY and save ¼ cup to use as a starter and prepare more Kombucha.
