Winter is the right time to make some  lip-smacking pickles at home. Pickles available in the market are loaded with preservatives and can affect your digestive system. Here are three different organic lemon pickle recipes that can be easily made at home:  

Oil-free lemon pickle

Ingredients – 10 lemons, lemon juice, ¼ cup of rock salt, 1 teaspoon asafoetida,  2 teaspoons chilli powder

Recipe

Cut each lemon into eight pieces and put them into a bowl

Add the juice of 2 lemons, turmeric, and rock salt. Mix well

Transfer the mixture to an airtight container and keep in sunlight for 4-5 hours every day for five days. Stir it  with a spoon every day

On the 6th day, add red chilli powder, asafoetida and mix well

Your oil-free lemon pickle is ready

Masala lemon pickle

Ingredients – 15 lemons, 4 tablespoon oil, 3 tablespoon rock salt, 2 tablespoon fennel seeds, 2 tablespoon red chilli powder, 2 tablespoon carom seeds, 1 teaspoon kalonji

Recipe

Lightly roast some fennel seeds, cumin seeds, and kalonji on a pan. Then crush them coarsely

Prepare masala by adding a mix of rock salt, red chilli powder, carom seeds, fennel seeds, cumin seeds, kalonji and mix well

Cut the lemons into small pieces or  slices. Remove the seeds and mix some oil with the slices

Add the masala and mix well to coat the lemon pieces equally

Keep the pickle in a sterilised glass jar and make sure to keep the pickle jar in sunlight for 4-5 hours every day for one week. Your masala lemon pickle will be ready to serve.

Lemon jaggery pickle

Ingredients – 15 lemons, 500 grams jaggery, 1 teaspoon ginger powder, 2 tablespoon black salt, ½ tablespoon garam masala, 3 tablespoon salt, ½ teaspoon black cardamom powder

Recipe

Cut each lemon into eight small pieces and remove the seeds

Transfer lemons to a container, add salt and keep them aside for 15-20 days in sunlight until the lemon skin becomes soft. Make sure to stir the lemons every day

After 15 days prepare jaggery syrup. Put jaggery and ½ cup water into a pan. When the jaggery is melted add lemon, ginger powder, black salt, garam masala, red chilly powder, and cardamom powder. Mix all ingredients well

Cook lemons in jaggery syrup until it becomes thick 

Allow the pickle to cool and transfer it into an airtight container. Your sweet lemon pickle is ready
