can make is a dip.

love dunking a crunchy tortilla chip or a piece of crusty bread into one of

Ajvar

When the
eggplant and red pepper come together, something magical happen! Combine both
the ingredients with spices and serve as a dip, or use it as an alternative to
pizza sauce.

Ingredients:

Large
eggplant 1

Large red
peppers 3

Garlic clove
1

Salt to
taste

Extra-virgin
olive oil 3 tablespoons

White
vinegar 4 teaspoons

Smoked
paprika ¼ teaspoon

Method: 

Preheat oven
to 475F. 

Put a baking
sheet with foil. 

Pierce
eggplant all over with a fork, then place cut-side down on prepared sheet with
peppers. 

Bake peppers
every 10 minutes on every side. 

Transfer
peppers to a large bowl, then cover tightly with plastic wrap. 

Let stand to
cool slightly, about 20 minutes.

Scrape out
eggplant.

Discard
skin. 

Blend garlic
and salt in a food processor, then add eggplant and peppers. 

Add oil,
vinegar, and paprika, and pulse to blend.

Tzatziki

This
refreshing creamy cucumber and yogurt dip is a crowd-pleaser. 

Ingredients:

Cucumber 1

Yogurt 1 cup

Finely
chopped cilantro ¼ cup

Lime zest 1
tablespoon

Lime juice 1
tablespoon

Salt to
taste

Method:

Grate the
cucumber and scatter it over a clean kitchen towel so that excess water is
absorbed.

Stir yogurt
with cucumber and other ingredients in a bowl and you are good to go.
