Pearl millet
biryani by Chef Ajay Markan

Ingredients:

Bajra 700 grams

Soya chunks 300 grams

Desi ghee 250 grams

Yellow chili powder 20 grams

Onion
500 grams

Bay leaves 4

Cinnamon stick 5 grams

Green and black cardamom 2 grams

Cloves 4 grams

Curd 100 grams

Lemon juice 10 ml

Ginger 25 grams

Garam Masala 10 grams

Green chili 25 grams

Cooking cream 150ml

Green coriander 10 grams

Mint 15 grams

Salt to taste

Method:

–        
Take a bowl and soak raw bajra in
water for 6 hours.

–        
In another bowl, add soaked soya
chunks in water for 30 minutes.                                                   
         

–        
Blanch the bajra on slow fire for 30
to 40 minutes and drain the water.

–        
Now take a pan and add desi ghee.

–        
Then, add whole spices, add slices of
onion fry them till get brown, add curd, yellow chili powder, garam masala,
salt and cooking cream.

–        
 Now make a jhol for dum. Jhol should be thin
not thick.                                                                                                         
                              Then add half done bajra and soya
chunks.

–        
Add split green chili, mint leaves,
and fried onion.

–        
Sprinkle some ghee on top and cover
it by silver foil and leave it for 10 minutes on slow flame.

–        
Now soya pearl millet Biryani is
ready.

Serve it with Burrani raita.

Gulabi Halwa by Chef Rehman Mujeebur

Ingredients:

Rose Petals
fresh 1kg

Milk 2 litres

Mawa 2 cups

Coconut powder
4 teaspoons

Sugar 1 cups

Cardamom
powder 1 teaspoon

Broken
Cashew 2 cups

Sunflower
seeds ½ cup

Desi ghee 1
cup

Method:

–        
Take
finely chopped fresh petals first and then put in a pan.

–        
Add
milk on a medium flame for 20-25 minutes, until it becomes a consistent
mixture.

–        
In
another pan, heat ghee and then add the mixture.

–        
Cook
it on simmer properly for 5-10 minute.

–        
Add
mawa, coconut powder, sugar, cashew nut and start stirring it for 5-10 minutes.

–        
Finally
add sunflower seeds and cardamom powder and stir for 5 more minutes.

–        
Halwa
is ready!
