Step 1: Wait for 3-4 whistles after adding the chana dal to the pressure cooker. Then drain the water and coarsely crush it.

Step 2: Fill the pressure cooker halfway with sugar/jaggery and mashed dal. Allow it to cook after thoroughly mixing it. Along with the grated nutmeg, add cardamom powder, ginger powder, and salt. Remember to maintain stirring over a low flame until the mixture is dry. Then turn off the gas and allow it to cool.

Step 3: In the meantime, knead the dough using maida or whole wheat flour (add ghee and salt). Cover the dough and set it aside for a few minutes to allow it to rise.

Step 4: Make little balls of dough and flatten them with your palms. Place a small amount of ghee and one teaspoon of the mixture you had set aside to cool. Seal the edges neatly.

Step 5: Roll it into a chapati and fry it for a minute on a Tawa or pan greased with ghee.
