During a busy morning, it’s often easy to let breakfast fall low in your
list of priorities, but breakfast is a must for all of us. It is the most
important meal of the day. What could be better than beginning the week with
something delicious?

So, if you have uttapam batter at home, you are all set for this recipe
– mini version of savoury pancakes. The best part about the recipe is that it’s
kid-friendly. 

Meghna Kamdar from ‘Meghna’s Food Magic’ fame recently took to Instagram
to share the recipe for ‘Mini Masala Uttapam.’

She wrote, “Made from ready uttapam batter, takes few minutes to make
this. Best for tiffin, breakfast, and actually any time of the day”.

Ingredients

Uttapam batter

Salt

Sambar masala 

 Carrot

 Chopped tomatoes

 Chopped onion

 Coriander leaves

Method

  1. Add a little salt to your
    uttapam batter*Heat up a non-stick pan.
  2. Spread a spoon of batter on
    the pan in a circular shape
  3. Keep the flame on high so
    that it starts cooking
  4. Add shredded carrots, finely
    chopped tomatoes, and onions, along with coriander leaves
  5. Add some oil on the sides
  6. Season it with sambar masala
    and a pinch of salt
  7. Keep pressing the vegetables
    gently inside the uttapam
  8. Once you see little holes on
    the uttapam, it means they are ready
  9. Toss the mini uttapam and
    cook on the other side
  10. Serve it with coconut
    chutney
