The
ancient Persian New year Nowruz begins Saturday and marks the celebration of
new beginnings with the spring season. The festivities continue for 13 days to celebrate the connection between humans and nature. Although considered secular, Nowruz is widely believed to be rooted in Zoroastrianism.

As we know, there
is never a best way to celebrate an occasion but one can always add more
flavours to the festivities by getting a splendid Parsi meal in place and enjoy
the authentic delicacies with your near and dear ones. If what to cook is the

Prawn Patio

Prawn Patio is not something you can just cook and eat, it is a work of art and if you are someone you still hasn’t tried this ethereal delicacy, today is your lucky day. Here is how you can prepare Prawn Patio.

Get finely chopped onion in a pan and add spices as per your taste into it. Prepare a thick gravy by adding sugarcane vinegar and add fresh prawns into it, cook until done and don’t thank us, first enjoy your meal.

Ravo

Now that we have reached the super-spicy point of our meal, we deserve some sweet Persian feast as well and what best way than to have a Ravo? Ravo is basically Parsi style kheer with a lot more for good.

You have to get some fresh milk, add sugar and keep cooking it until it reduces to little, then add butter, then carefully sprinkle the semolina over the surface and keep stirring so that it doesn’t create lumps.

Then add a tablespoon of vanilla cream and rose water to give it an authentic flavour.  

Mori Dal

Mori Dal will certainly become your favourite Parsi dish once you try your hands on it and the best part is how easy it is to prepare, even for the beginners.

So,
what you have to do is, place in a pan or pressure cooker with the turmeric and
salt. Bring to boil, skim, lower heat and simmer till completely soft. Pour the
dal in the mixer till it is smooth in consistency. You may also add some ghee
and butter to add the rich taste.

Then
make the vaghar by heating the ghee in a kadhai. Put in the garlic until it
crisps and turn golden-hued. Sprinkle over the dal before serving with plain
boiled rice and patio.

Sev
(Nutty vermicelli dessert)

While
the general idea is dessert after the main course, here you can cheat your way
out to this sweet delicacy. Sev is a sweet dish prepared by roasting sev in a
pan and adding all the royal nuts like almonds, cashews, pistachios to add flavour.

For
the lovers of cream, adding vanilla or any other flavoured cream is encouraged.
However, we never said you cannot save some for after the supper. So don’t
wait, prepare some Sev and make your Navroz celebrations sweeter with this
dish.
