The tortellini pasta’s first incarnation was called torteletti and was made in 1570 in the north Italian region of Emilia-Romagna by Bartolomeo Scappi. In the traditional way, tortellini is made by stuffing the pasta with meat, parmesan cheese, nutmeg, and egg. It is then put into a capon broth to serve. There is an ongoing debate among Italians from Bologna and Modena regarding where the dish first originated. Tortellini is often served as a Christmas special dish.
Tortellini is also referred to as ombelico pasta because it is shaped like a navel. The dish became popular among common people only after the 19th century. Before that, it was only served to the rich. There is an organization called the Learned Order of the Tortellini, which was established in 1965, that celebrates the dish and is dedicated to maintaining its authenticity.
The organization even formally registered a recipe with the Italian Culinary Academy in 1974. The method includes precise measurements including the thickness of the dough or the weight of each tortellino, which should be five grams.
Castelfranco Emilia celebrates a special day each year called the Sagra de Tortellino where people dress up in costumes and enact the events that led to the origin of this pasta variety.
Tortellino, when eaten as a dessert, is stuffed with pastry cream, deep fried, and sprinkled with powdered sugar.
