Squash is a non-alcoholic beverage that is made with concentrated syrup. It is typically fruit-flavored and produced using fruit juice, water, sugar or a sugar alternative. Food coloring and flavoring may also be present in modern squashes. Herbal extracts are found in some traditional squashes, most notably elderflower and ginger.

Before consuming, squash is blended with a specified amount of water or carbonated water. The amount of water used is up to you, with the squash getting weaker as it is diluted. It can be used with an alcoholic beverage to make a cocktail as a drink mixer. Squash is frequently made with citrus fruits (especially orange, lime, and lemon) or a combination of fruits and berries.

In the United Kingdom, traditional squashes are typically flavored with elderflower, orange, lemon, or blackcurrant. In Eastern Europe, raspberries and blackberries are popular, and currants are a prominent addition in the Low Countries.

One part concentrate and four or five parts water are combined to make squash (carbonated or still). There are nine parts water to one part concentrate when making double-strength squash and traditional cordials, which are thicker. Some squash concentrates are relatively weak, and to make up for this, one part concentrate and two or three parts water are sometimes combined.

Due to their intended shelf-life, most cordials and squashes contain preservatives such potassium sorbate or (in traditional cordials) sulphites. Due to the preservatives and high sugar content, they keep well. But some people like to keep their squash in refrigerators.

Squashes and cordials now contain a variety of different ingredients. Three ingredients make up a conventional cordial: sugar, juice or plant extract, and some water. In most cases, it can include an acidifier like citric acid, lemon juice, or even spices like cinnamon or cloves in extremely old-fashioned cordials. Although sugar alone will keep it fresh for quite a while, recreations of these classic dishes frequently incorporate a preservative, typically sulphur dioxide.
