We don’t listen to people who tell us we can’t eat a whole
pizza because we don’t need that kind of negativity in our lives, so we’re
giving fast food a healthy spin with Zucchini Pizza this Sunday. We think about
dieting, then eat pizza, and if you’re as guilty as we are, trust us when we
say that every day is a wonderful day to whip up an amazing snack food with a
healthy twist, like this Zucchini Pizza.

To make the crust, combine the following ingredients in a
mixing bowl.

·       
1⁄2 cup almond flour, plus a little extra for
dusting

·       
2 cups shredded zucchini from two medium
zucchini

·       
2 eggs (large)

·       
1 teaspoon oregano, dry

·       
a quarter teaspoon of garlic powder

·       
a pinch of black pepper and a pinch of fine sea
salt

For the toppings, you’ll need:

·       
5 finely sliced tiny little bell peppers

·       
½ cup halved grape tomatoes

·       
1/4 cup chopped red onion

·       
½ cups sliced baby bella mushrooms

·       
1 teaspoon extra-virgin olive oil, plus a little
more to drizzle

·       
2 oz. diced fresh mozzarella cheese (can also
use shredded)

·       
a pinch of dried oregano to sprinkle on top flakes
of red pepper

Method:

Preheat the oven to 450°F with the top and bottom racks in
place. Dust a baking sheet with almond flour after lining it with parchment
paper. Set out a big piece of cheesecloth or a clean kitchen towel and grate
the zucchini with a box grater into the towel, squeezing off any excess juice
over the sink. In a large mixing bowl, toss the zucchini.
