Cotton candy or candy floss is a popular spun sugar confection that resembles cotton.

The confection dates back more than a century: it was invented in 1897 by dentist dentist­ William Morrison, with the help of confectioner John C. Wharton.

Together the pair designed and patented what they described as an electric candy machine, which was the precursor to modern day candy machines that we see around us.

According to National Geographic, the machine consisted of a metal bowl perforated with minuscule holes that had a central spinning head containing sugar crystals.

The machine would work by melting the sugar crystals into syrup through heat and then spinning the syrup at 3,400 revolutions per minute to force it through the tiny holes. As the syrup goes through the holes, it cools rapidly into an amorphous solid that we know as cotton candy or candy floss.

Machine-made cotton candy was introduced to the World Fair in 1904, and was an instant hit, selling 68,655 boxes.

Later, in 1978, automatic cotton candy machines were invented in the US, making cotton candy a common confection at events and festivals worldwide.

It’s unclear when or how it started, but the US celebrates National Cotton Candy Day on December 7 each year. Given the fact that the deadly Pearl Harbour attack during World War II also took place on December 7, people believe that cotton candy may have been used to lighten the mood on the day in subsequent years.
