Pasta called farfalle is also referred to as bow-tie pasta or butterfly pasta. The word comes from the Italian farfalle (butterflies). Farfalle is called strichetti in the Emilia-Romagna area of Italy (a local word for “bow ties”). Farfalle comes in two sizes: farfalline, which is the smaller form, and farfalloni, which is the larger. In Northern Italy’s Lombardy and Emilia-Romagna areas, farfalle has been around since the 16th century.

Despite coming in a variety of sizes, farfalle all have a unique “bow tie” form. Usually, a rectangle or oval of pasta is used to construct farfalle, with the centre being pinched together and two of the sides being clipped to create a ruffled edge. Farfalle rigate is the name for the pasta’s ridged kind. Farfalle is best paired with cream and tomato sauces, though they go well with most sauces.

Additionally to basic and whole-wheat variations, colours are added to the dough by combining specific ingredients, which also changes the flavour (as with any pasta). Beetroot, spinach, and cuttlefish ink, for instance, can be used to colour something red, green, or black. There might potentially be a tomato variety. The colours of the Italian flag are commonly evoked by the combination of green, white, and red variants that are frequently sold together.
